Spicy Jerk Chicken Wings
Hot and spicy jerk chicken wings, coated with homemade jerk seasoning and salt, then grilled — the spicy tray from the garden-party prep.

Ingredients
- 900 g (2 lb) chicken wings
- 2 tablespoons spicy jerk seasoning
- 1½ teaspoons salt
Instructions

Pat the wings dry and place them in a large bowl.

Add the jerk seasoning and salt. Toss and rub until every wing is evenly coated.

Cover and marinate in the refrigerator for at least a few hours, or overnight. For a party, the seasoned wings can be frozen well ahead and thawed before cooking.

Grill over medium-high heat, turning often, until the skin is charred in places and the wings are cooked through, about 25–30 minutes.

Rest for a few minutes, then serve hot.
Notes & serving ideas
- These were the hot, spicy wings, kept separate from the mild pieces so guests could choose.
- For the garden party, about 12.9 kg of chicken was seasoned in total across wings, legs and breasts.
- Chicken is safely cooked when the thickest pieces reach an internal temperature of 75°C.
