Ingredients

  • 900 g (2 lb) chicken wings
  • 2 tablespoons spicy jerk seasoning
  • 1½ teaspoons salt

Instructions

  1. 1

Pat the wings dry and place them in a large bowl.

  2. 2

Add the jerk seasoning and salt. Toss and rub until every wing is evenly coated.

  3. 3

Cover and marinate in the refrigerator for at least a few hours, or overnight. For a party, the seasoned wings can be frozen well ahead and thawed before cooking.

  4. 4

Grill over medium-high heat, turning often, until the skin is charred in places and the wings are cooked through, about 25–30 minutes.

  5. 5

Rest for a few minutes, then serve hot.

Notes & serving ideas

  • These were the hot, spicy wings, kept separate from the mild pieces so guests could choose.
  • For the garden party, about 12.9 kg of chicken was seasoned in total across wings, legs and breasts.
  • Chicken is safely cooked when the thickest pieces reach an internal temperature of 75°C.
