Mild Jerk Chicken Breast
A milder jerk chicken breast, seasoned with salt and jerk rub — the in-between heat from the garden-party grill, suitable for guests who prefer less spice.

Ingredients
- Chicken breasts
- 2 teaspoons salt
- 1 cup jerk rub
Instructions

Pat the chicken breasts dry and place them in a large bowl.

Add the salt and jerk rub. Mix and rub until every piece is evenly coated.

Cover and marinate in the refrigerator for at least a few hours, or overnight. The seasoned chicken can also be frozen well ahead of a party.

Grill over medium heat, turning once, until cooked through and lightly charred, about 20–25 minutes depending on thickness.

Rest for a few minutes, then slice or serve whole.
Notes & serving ideas
- For a heat level in between the spicy wings and the mild legs, mix homemade jerk seasoning with a little store-bought jerk sauce.
- Chicken is safely cooked when the thickest pieces reach an internal temperature of 75°C.
