One-Bowl Banana Bread

Ingredients
- 3 large overripe bananas (or 4 small bananas)
- ½ cup unsalted butter, melted
- ⅔ cup granulated sugar
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt

Heat the oven to 350°F (175°C). Grease a 9 × 5-inch loaf pan.

Mash the bananas in a large mixing bowl, then whisk in the melted butter.

Whisk in the sugar, eggs and vanilla until combined.

Add the flour, baking soda, baking powder, cinnamon and salt. Fold gently with a spatula just until no dry streaks remain.

Transfer the batter to the prepared loaf pan and smooth the top.

Bake for about 60 minutes, until a toothpick inserted in the centre comes out clean.

Leave the loaf in the pan for 5–10 minutes, then move it to a wire rack to cool completely.
Notes & serving ideas
- Very ripe, brown-spotted bananas give the loaf its best sweetness and moisture.
- Fold only until combined; overmixing can make banana bread tough.
